Sour Cherry Soup cold


350g ripe sour cherries
juice and zest of one lemon
pinch salt
4 whole cloves
1 to 2 cinnamon sticks
100g sugar
100ml red wine
200ml sour cream
one tbs four
4 cups water

Wash and remove pits from cherries add water and a pinch of salt, add cinnamon cloves and sugar to taste, adjust for flavour, add lemon juice and zest, simmer over low heat for 10 to 15 mins.
Add the red wine.
In a small bowl mix together sour cream and flour, remove soup from heat, take some of the soup and mix it into the sour cream and flour, carefully pour back into soup and stirring constantly cook for 5 more mins.  Serve cold.
